Vegetables may be the perfect compliment to oats. Crunchy where they are soft, colourful where they are bland. Best of all vegetables like kale and bell peppers offer a complimentary nutrient profile with oats. Kale brings the essential minerals like potassium and magnesium, bell peppers bring the Vitamin A and C while oats deliver fibre and protein to keep us going.
Veggie and Herb Packed Savoury Oatmeal
- Your favourite oats (quick, soaked, steel cut). Other hot cereals like polenta, quinoa or grits work great too.
- 2 tbsp per serv - SVRY Fez Granola and topper (see below for recipe without SVRY Fez blend)
- (Optional) A basted or poached egg
- (Optional) Olive oil
Prepare oats according to package instructions or with your favourite overnight soak recipe.
For a crunchy veggie oatmeal, top oatmeal with 2 tbsp of SVRY Fez blend per serving. For softer vegetables, stir 2 tbsp per serving of SVRY Fez blend into the oatmeal with an extra splash of hot water.
Top with a basted, poached or fried egg and your favourite hot sauce. If not using an egg, try topping with a good olive oil. Serve warm.
If you don't have SVRY Fez Granola and topper:Serves 4:
- 1-2 cups oats
- 1 cup Kale, sliced
- 1 red bell Red Bell Pepper
- 1/4 tsp Cumin
- 1/4 tsp Cinnamin
- 1/4 tsp Parsley
- 1/4 tsp Coriander seed, ground
- 2 tbsp chopped parsley
- 2 tbsp roasted almonds
- 2 tbsp hemp hearts
- olive oil
Quickly saute some sliced kale and red bell pepper in a pan with olive for 2 minutes. Season with a 1/4 tsp each cumin, cinnamon, coriander and 2 tbsp chopped parsley. Add salt and pepper to taste.
Top or mix prepared oatmeal with the vegetable mix. Top with roasted almonds and hemp seeds and more herbs. Finish with a splash of good olive oil and/or hot sauce.
